Job Overview
The General Manager plays a crucial role in overseeing the daily operations of our establishment, ensuring a seamless experience for both staff and guests. This position requires a dynamic individual with a strong background in the food and hospitality industry, capable of managing various aspects of restaurant operations, including inventory control, food safety, and customer service. The House Manager will work closely with kitchen staff and front-of-house teams to maintain high standards of service and efficiency.

Responsibilities:

Overall Restaurant Operations:

  • The GM is responsible for overseeing all restaurant operations in accordance with Firehouse Subs standards, ensuring compliance with Health Department regulations related to food safety, and adhering to all Kasongo Fire, LLC franchise policies.

Revenue Management:

  • The GM must ensure that labor costs are maintained at or below 22%.
  • Food costs must be managed to stay at or below 32%.
  • Waste should be controlled to remain under 3%.
  • Public Safety Foundation (PSF) donations must be at least 0.5% of total sales.

Staffing:

  • The GM is responsible for ensuring that the restaurant is adequately staffed with qualified personnel during all operating shifts. Staffing levels should meet operational needs while optimizing labor cost efficiency.

Inventory Management:

  • The GM must ensure that all necessary foods and supplies are ordered and stocked in an organized and timely manner to prevent shortages.
  • A weekly inventory must be conducted for bread, meats, and cheeses.
  • A complete monthly inventory of all items in the restaurant must be performed to maintain accurate records and control costs.

Steritech Self-Assessment (Fire Report):

  • The GM must ensure that a Steritech self-assessment (Fire Report) is conducted weekly to verify that the restaurant is following Firehouse Subs’ best practices.
  • The completed report must be uploaded to Microsoft Teams in the Steritech Reports folder.
  • Any issues identified during the assessment must be addressed within 48 hours.
  • Only the GM, Assistant Manager (AM), or District Manager (DM) is authorized to perform the self-assessment.
  • The GM is responsible for ensuring that any items or processes not meeting expectations are corrected within 48 hours of identification during the Steritech self-assessment or any other quality control checks.

Quarterly Employee Evaluations:

  • The GM must conduct quarterly evaluations for all employees under their leadership.
  • During the evaluation, the employee must be informed of their strengths and areas needing improvement.
  • The GM must review any corrective action plans in the employee’s folder (hosted in Teams) to assess the employee’s progress and ensure that the employee is making improvements as outlined in the corrective action plan.

Customer Service Culture:

  • The GM must create a store culture where customer service is at the heart of every transaction.
  • The GM is responsible for ensuring that all employees are friendly and considerate of customer needs.
  • The GM must take immediate action to resolve any quality issues brought forward by customers in person, by phone, SMG360, third-party applications, or any other communication channels.

Accountability and Problem-Solving:

  • The GM must be a responsible individual who takes accountability for themselves and their staff.
  • The GM must be proactive in solving issues that arise within the restaurant and must present potential solutions for issues they cannot resolve on their own.
  • The GM must remain accessible at all times for emergencies. If the GM will be unreachable during any period, they must inform their leadership team in advance.

Leadership Oversight and Development:

  • The GM must ensure that the Assistant Manager (AM) and Shift Leaders (SLs) are consistently following Firehouse Subs standards, complying with Health Department regulations, and adhering to all Kasongo Fire, LLC policies.
  • The GM is responsible for providing ongoing coaching and mentoring to the AM and SLs, holding them accountable when they fail to follow directions or policies by creating and issuing corrective action plans as necessary.

The GM must also train the AM and SLs to coach and mentor their own subordinates, fostering leadership development within the team.

Job Type: Full-time

Pay: $18.00 – $25.00 per hour
